    Peanutbutter chocolate chip cookie truffles

    Before I was a ~health nut~ I used to bring Oreo cookie truffles to every fam get together, and they were always a HIT. Everyone loved em, buuuuut… they were far from healthy. Although I can’t even eat these right now because of SIBO, I still wanted to try and recreate an old fav in a healthier way. My 13 year old nephew – who usually won’t even touch my creations – gave these a 10/10 and said they were amazing.     Favorite On-The-Go breakfast

    Sweet breakfasts on-the-go are easy. Yogurt parfaits, smoothies, oats, etc. But what do you do when you’re on the go and prefer a savory breakfast? THIS- I make this the night before, and heat  it up in the morning before I head out the door Ingredients –  2 eggs Veggies of choice (green beans, spinach, mushrooms, peppers, tomatoes etc etc) Avocado Salt and pepper  (optional: nutritional yeast) Here’s whatchya do Hard boil the eggs (click here if you do not know how) Sautee veggies in avocado oil (or oil of choice) Peel and cut up eggs.     Seasonal Salad

    A perfect seasonal salad for the fall/winter! This has been one of my favorite lunches lately – Ingredients  Arugula Apple slices Beets Cashews, almonds, or pecans Ground turkey Cinnamon roasted carrots Cinnamon roasted squash (delicata, butternut, or acorn) Raisins or sun dried tomatoes Olive oil and red wine vinegar to dress *I meal prep every Sunday so my veggies are already roasted and my turkey is already cooked and this comes together super quickly! To roast carrots/squash Wash/cut Place on baking sheet Spray with avocado oil (or oil of choice). Season with pink salt and cinnamon Roast at 425F.     It’s Christmas time, betches. AKA the best time of the year (except maybe it would be better if I lived in California and it wasn’t so cold) anyways… gift giving is one of my favorite things.
