PB & Banana Oatmeal bars

 

This chewy oatmeal bar is delicious enough to taste like a treat, but healthy enough to eat for breakfast! The recipe is easily customizable to YOUR liking and preferences, and gets its sweetness naturally from bananas! If you like things sweeter, add some raw honey or pure maple syrup!

INGREDIENTS:

2 large, ripe, bananas

1/2-¾ cups peanut butter

2 cups gluten free old fashioned oats

1 pint blueberries (about ½ cup)

½ tsp pure vanilla extract

Dash of cinnamon

Optional:

  • 1 small zucchini, shredded
  • ½ cup shredded coconut flakes
  • ½ cup chopped nuts
  • A few scoops of collagen or protein powder
  • Honey or pure maple syrup to taste
  • Chocolate Chips

 

Instructions

  1. Preheat oven to 350F
  2. In a large mixing bowl, mash the bananas and mix in the peanut butter
  3. Add in the oats and mix
  4. Add in cinnamon, vanilla extract, blueberries, and other optional ingredients. Mix until well combined
  5. Bake in and 8X8 pan for about 21 minutes
  6. Store in fridge for prolonged freshness
