Valentines day is just around the corner. If you’re single and dreading it, show yourself some love and make these yummy treats. Or even if you’re not single.. you can still show yo self some love! Any excuse to make dessert is a good one. Especially when it’s healthy, right?!

STRAWBERRY COCONUT BUTTER CUPS
Super easy to make. Added sugar optional. Healthy and delicious – my kind of food. Here we go..
You will need- A food processor and mini cupcake liners (regular ones will work too, or even an ice cube tray)
- 1 – 2 cups strawberries (fresh or frozen will work)
- 2 cups unsweetened shredded coconut
- 1 tsp vanilla extract
- Your favorite dark chocolate (I used unsweetened dark chocolate from Trader Joes to keep these free of added sugar)
- Coconut oil – about 1/4 cup but no real need to measure.
- Optional : honey, dates, or maple syrup if you like things sweeter.
STEP ONE – First chocolate layer
Start by melting a little less than half of your chocolate.
Put it in a bowl with about 1 tbs of coconut oil and microwave at 30 second intervals, stirring in between.
Pour melted chocolate into cupcake molds, just enough to fill the bottom. Place in freezer
STEP TWO – Coconut butter time
Place the shredded coconut in your food processor and blend.
After a minute, stop and scrape down the sides. Add in some coconut oil and blend again – let it go for a few minutes.
Repeat the process until it is smooth and creamy.
Add in strawberries, vanilla extract and optional sweetener. Blend until everything is combined.
Take cupcake molds out of fridge and put about 1 heaping TBS of the coconut butter on top of the chocolate. Place back in freezer for 10 mins.
STEP THREE – cover em!
After 10 mins, melt the rest of your chocolate.
Remove from freezer and cover the coconut butter with the melted chocolate.
Place back in freezer for a few mins and they’re ready to enjoy!
